Le Rouge
It is an original blend of 4 iconic grape varieties: Cinsault, Syrah, Mourvèdre, Cabernet-Sauvignon.
Harvested by hand in crates, destemmed upon arrival at the cellar, they are transported in wagons above the vats to use only gravity. They macerate and ferment for 10 to 12 days with daily pumping overs for 5 to 10 minutes depending on the taste of the juices. At the end of this vinification, the free-run juices are put into barrels. Aged in barrels separately before blending in foudres. Aged for 12 months.
